In recent years, the trend of nitro beverages, particularly nitro cold brew coffee, has taken the beverage industry by storm. However, there's a growing concern regarding the method of nitrogen infusion used by some beverage dispensers.

Understanding Atmospheric Nitrogen and Traditional Nitrogen


Atmospheric Nitrogen: Atmospheric nitrogen is essentially compressed air, which constitutes approximately 78% nitrogen, 21% oxygen, and small amounts of other gases. While it might seem convenient and cost-effective to use, it introduces a significant amount of oxygen into the beverage.


Traditional Nitrogen: Traditional nitrogen used in beverage dispensing is pure nitrogen gas. It is produced through a process called cryogenic distillation, ensuring that the nitrogen is separated from other atmospheric gases, particularly oxygen. This results in a gas that is 99.9% nitrogen, with negligible oxygen content.


Other methods used are separation of Oxygen from an air stream either by carbon beds, or membrane technology. These technologies are found in Nitrogen separators, or Nitrogen Generators removing a significant amount of the oxygen content to be used in a beverage dispensing application.

  1. Oxidation: Oxygen is notorious for causing oxidation, a chemical reaction that degrades the quality of beverages.
